Nicolas Cloiseau, Master Chef of La Maison du Chocolat, uses the chromatic nuances of chili, raspberry, and red pepper as the tableau for a new range of ganache flavours to enrich the summer macaron. The slightly spicy rush of Espelette pepper introduces the fruity flavour of fresh red pepper prolonged by acidulous notes of lush ripe raspberries. This enticing duo of raspberry and red pepper creates a remarkably full-flavoured chocolate ganache with peppery notes of intense chocolate.
